Cooking Methods encompass various techniques used to prepare and cook food, enhancing flavor and texture.

Core Techniques

Dry Heat

  • Baking
  • Roasting
  • Grilling

Moist Heat

  • Boiling
  • Steaming
  • Poaching
  • Sous vide (water-bath cooking)

Combination

  • Braising
  • Stewing
Comparison matrix distinguishes dry heat using air, radiation or fat; moist heat using water, other liquid or steam, including water-bath sous vide; and combination cooking with dry and moist stages.
The defining difference is the cooking medium and sequence. Water-bath sous vide belongs with moist-heat techniques here; it does not inherently combine dry and moist stages. Original conceptual diagram based on Illinois State Board of Education, Combination Cooking Methods, and Byron Chaves, To sous vide or not to sous vide (NDSU Extension webinar, March 18, 2026).
